Mini Cheesecakes

Prep = 10 min; Inactive = 0 min;  Cook =  25 min; 24 servings

Ingredients

• 2 packages cream cheese
• 3/4 cups sugar
• 1 teaspoon vanilla extract
• 2 eggs
• 1 box vanilla wafers

Directions

Mix all ingredients.  Place a vanilla wafer in each muffin tin.  Fill the tin 2/3 full with batter.  Baker at 350 for 20 – 25 minutes
